For the Ribeye Steak:

- 2 tbsp olive oil
- 3 tbsp unsalted butter

For the Crispy Fries:
- 4 medium russet potatoes, peeled and cut into thin strips
- 3 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp paprika (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Fries:
- Preheat your oven to 425°F (220°C).
- Soak cut potatoes in cold water for 20–30 minutes to remove excess starch. Drain and pat dry.
- Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Spread evenly on a baking sheet lined with parchment paper and bake for 25–30 minutes, flipping halfway through, until golden and crispy.
- Sear the Ribeye Steak:
- Remove steaks from the refrigerator 30 minutes before cooking. Pat dry and season with salt and black pepper.
- Heat olive oil in a skillet over medium-high heat. Sear steaks for 3–4 minutes on each side for medium-rare.
- Infuse with Garlic Butter:
- Lower the heat to medium. Add butter, smashed garlic cloves, and rosemary or thyme sprigs.
- Continuously spoon melted butter over the steaks for 1–2 minutes.
- Remove steaks from the skillet, tent with foil, and let rest for 5–10 minutes.
- Serve:
- Plate steaks with crispy fries. Drizzle any remaining garlic butter over the steaks.
- Garnish fries with parsley and serve immediately with your favorite dipping sauce.
