For the Crispy Fries:

  • 4 medium russet potatoes, peeled and cut into thin strips
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Fries:
    • Preheat your oven to 425°F (220°C).
    • Soak cut potatoes in cold water for 20–30 minutes to remove excess starch. Drain and pat dry.
    • Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
    • Spread evenly on a baking sheet lined with parchment paper and bake for 25–30 minutes, flipping halfway through, until golden and crispy.
  • Sear the Ribeye Steak:
    • Remove steaks from the refrigerator 30 minutes before cooking. Pat dry and season with salt and black pepper.
    • Heat olive oil in a skillet over medium-high heat. Sear steaks for 3–4 minutes on each side for medium-rare.
  • Infuse with Garlic Butter:
    • Lower the heat to medium. Add butter, smashed garlic cloves, and rosemary or thyme sprigs.
    • Continuously spoon melted butter over the steaks for 1–2 minutes.
    • Remove steaks from the skillet, tent with foil, and let rest for 5–10 minutes.
  • Serve:
    • Plate steaks with crispy fries. Drizzle any remaining garlic butter over the steaks.
    • Garnish fries with parsley and serve immediately with your favorite dipping sauce.
