Ingredients

Scale
  • 3 lbs pork shoulder or pork butt
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/2 cup chicken broth
  • 1/4 cup apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 sandwich buns
  • Optional toppings: coleslaw, pickles, sliced jalapeños

Instructions

  • Prepare the Pork: Rub pork shoulder with smoked paprika, chili powder, garlic powder, salt, and black pepper until evenly coated.
  • Layer Ingredients in Slow Cooker: Place sliced onion and minced garlic at the bottom of the slow cooker. Add the pork shoulder on top.
  • Add Sauce and Seasonings: Pour in barbecue sauce, chicken broth, and apple cider vinegar. Sprinkle brown sugar over the pork.
  • Cook the Pork: Cover and cook on low for 8–10 hours or high for 4–5 hours, until the pork is tender and easily shreds with a fork.
  • Shred and Mix: Remove the pork from the slow cooker and shred with two forks. Return shredded pork to the slow cooker and mix with the sauce.
  • Assemble Sandwiches: Toast sandwich buns if desired. Pile pulled pork onto each bun and add optional toppings like coleslaw or pickles. Serve warm.

Notes

  • Make-Ahead Tip: Prepare the pulled pork a day ahead, store it in the refrigerator, and reheat before serving.
  • Freezing: Store leftover pulled pork in an airtight container for up to 3 months.
  • Adjust Spice: For extra heat, add cayenne pepper or hot sauce to the rub or sauce.
