- 2 cups apples, peeled and diced (about 2 medium apples)
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 package refrigerated pie crusts (or homemade if preferred)
- 1 tablespoon butter, cut into small pieces
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
- A pinch of salt

Preheat the Oven:
- Preheat your oven to 375°F (190°C).

Prepare the Apple Filling:
- In a medium bowl, mix together diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
- Stir until the apples are well coated and the mixture slightly thickens.

Prepare the Pie Crusts:
- Roll out the pie crusts on a floured surface.
- Using a round cutter (about 3 inches in diameter), cut circles to fit into a muffin tin.
- Press each dough circle gently into the muffin tin, creating small pie shells.

Assemble the Mini Pies:
- Fill each pie shell with apple mixture, packing lightly.
- Top each pie with a small piece of butter.
- Roll out the remaining dough and cut smaller circles or strips to create lattice tops for each pie.
- Place on top of the apple filling and press the edges to seal.

Bake the Mini Pies:
- In a small bowl, whisk together egg and milk to create an egg wash.
- Brush the tops of the pies with the egg wash for a golden finish.
- Bake for 25–30 minutes, or until the crust is golden brown and the filling is bubbly.

- Remove from the oven and let cool for 5–10 minutes before serving.
- Enjoy warm, with a scoop of vanilla ice cream or caramel drizzle!
