Instructions

  • Prepare the Meatloaf:

    • Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
    • In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix until well combined but do not overmix.
    • Transfer the mixture into the prepared loaf pan, pressing it down to shape the loaf.
  • Bake the Meatloaf:

    • Bake for 50–60 minutes, or until the internal temperature reaches 160°F (70°C).
    • Let the meatloaf rest for 10 minutes before slicing.
  • Prepare the Mashed Potatoes:

    • While the meatloaf bakes, boil cubed potatoes in salted water for 15–20 minutes, or until fork-tender.
    • Drain the potatoes and return them to the pot.
    • Add milk, butter, salt, and pepper, then mash until smooth and creamy.
  • Serve:

    • Slice the meatloaf and serve with a generous scoop of mashed potatoes.
    • Garnish with fresh parsley, if desired.
