Ingredients
Scale
For the Steak:
- 2 ribeye or sirloin steaks (about 12 oz each)
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- Salt and pepper, to taste
- Fresh thyme or rosemary (optional, for garnish)
For the Fries:
- 4 medium-sized russet potatoes, peeled and cut into thin strips
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 teaspoon paprika (optional, for a smoky kick)
- Fresh parsley, chopped (for garnish)
Instructions
- Prepare the Fries:
- Preheat the oven to 425°F (220°C).
- Toss potato strips with olive oil, garlic powder, paprika, salt, and pepper.
- Arrange on a parchment-lined baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- Cook the Steak:
- Let steaks come to room temperature for 30 minutes. Pat dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear steaks for 3-4 minutes on each side for medium-rare (adjust as needed).
- Reduce heat to medium. Add butter and minced garlic. Spoon garlic butter over the steaks for 1-2 minutes.
- Remove from heat, tent with foil, and rest for 5-10 minutes.
- Serve:
- Plate steak with fries. Drizzle remaining garlic butter over the steak.
- Garnish with parsley for fries and thyme/rosemary for steak. Serve hot!
Notes
- Use a meat thermometer for accuracy: Medium-rare is 130°F (54°C), and medium is 140°F (60°C).
- Soaking potato strips in cold water for 30 minutes removes starch for crispier fries.
- Add paprika for a smoky twist to the fries or skip for classic flavor.
