Instructions

  • Cook the Bacon:
    • In a large pot, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon drippings in the pot.
  • Sauté Vegetables:
    • Add onion and celery to the bacon drippings. Sauté for 5 minutes until softened.
    • Stir in garlic and cook for 30 seconds until fragrant.
  • Cook the Potatoes:
    • Add diced potatoes, clam juice, and chicken broth to the pot. Bring to a boil, then reduce heat to low. Simmer for 15–20 minutes, or until potatoes are tender.
  • Thicken the Chowder:
    • In a small bowl, whisk together flour and heavy cream until smooth. Slowly stir the mixture into the pot, cooking for about 5 minutes until the chowder thickens.
  • Add Clams and Seasonings:
    • Stir in chopped clams (with their juice), dried thyme, and smoked paprika (if using). Simmer for another 5 minutes to meld flavors.
    • Season with salt and black pepper to taste.
  • Serve and Garnish:
    • Ladle the chowder into bowls. Garnish with crispy bacon and fresh parsley. Serve hot with crusty bread or oyster crackers.
