  • 3 large carrots, peeled and cut into chunks
  • 3 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 3 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup frozen peas
  • Fresh parsley, chopped, for garnish

Instructions

  • Prepare the Beef: Toss beef cubes with flour, salt, and black pepper until evenly coated.
  • Brown the Beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef cubes in batches and set aside.
  • Sauté the Aromatics: In the same pot, sauté onion and garlic until softened (2–3 minutes).
  • Build the Base: Stir in tomato paste, cook for 1 minute, then deglaze the pot with red wine (if using). Add beef broth, Worcestershire sauce, thyme, and bay leaves.
  • Simmer the Stew: Return beef to the pot, add carrots, potatoes, and celery. Cover and simmer on low heat for 1.5 to 2 hours, stirring occasionally.
  • Finish the Stew: Stir in peas during the last 10 minutes of cooking. Discard bay leaves and adjust seasoning as needed.
  • Serve: Garnish with fresh parsley and serve hot with bread or a salad.

  • For a non-alcoholic version, replace red wine with additional beef broth or grape juice.
