- 2 bay leaves
- 1 cup frozen peas
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the Beef: Toss beef cubes with flour, salt, and black pepper until evenly coated.
- Brown the Beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef cubes in batches and set aside.
- Sauté the Aromatics: In the same pot, sauté onion and garlic until softened (2–3 minutes).
- Build the Base: Stir in tomato paste, cook for 1 minute, then deglaze the pot with red wine (if using). Add beef broth, Worcestershire sauce, thyme, and bay leaves.
- Simmer the Stew: Return beef to the pot, add carrots, potatoes, and celery. Cover and simmer on low heat for 1.5 to 2 hours, stirring occasionally.
- Finish the Stew: Stir in peas during the last 10 minutes of cooking. Discard bay leaves and adjust seasoning as needed.
- Serve: Garnish with fresh parsley and serve hot with bread or a salad.
