    • 1 lb flank steak or sirloin, thinly sliced against the grain
    • 2 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tbsp Shaoxing wine (or dry sherry)
    • 1 tsp sesame oil (optional)
  • For the Sauce:
    • 3 tbsp soy sauce
    • 2 tbsp oyster sauce
    • 1 tbsp hoisin sauce
    • 1 tsp sugar
    • 1/4 cup water or beef broth
  • For the Stir-Fry:
    • 2 tbsp vegetable oil
    • 2 large onions, thinly sliced
    • 3 cloves garlic, minced
    • 1 tbsp ginger, minced
    • 1 green onion, chopped (for garnish)

Instructions

  • Marinate the Beef:
    Combine soy sauce, cornstarch, Shaoxing wine, and sesame oil in a bowl. Add beef slices and mix well. Marinate for at least 20 minutes.
  • Prepare the Sauce:
    Whisk soy sauce, oyster sauce, hoisin sauce, sugar, and water (or beef broth) in a small bowl. Set aside.
  • Cook the Beef:
    Heat 1 tbsp vegetable oil in a wok over high heat. Add marinated beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
  • Stir-Fry the Onions:
    Add 1 tbsp vegetable oil to the wok. Stir-fry onions, garlic, and ginger for 3-4 minutes until tender and slightly caramelized.
  • Combine and Finish:
    Return beef to the wok. Pour in the prepared sauce. Stir-fry for another 2-3 minutes until beef is cooked through and coated in the sauce.
  • Serve:
    Garnish with green onions and serve hot over steamed rice or noodles.

Notes

  • Freeze beef for 15 minutes before slicing for easier handling and thin, even pieces.
  • Stir-fry in small batches to maintain high heat and prevent overcrowding.
