For the Sausage Gravy:

  • 1 pound breakfast sausage
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)

Instructions

  • Make the Biscuits:
    • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
    • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
    • Cut in the cold, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Gradually pour in buttermilk, stirring just until the dough comes together.
    • Turn the dough onto a floured surface and gently pat it into a 1-inch-thick rectangle. Fold it over itself a few times, then roll it out again.
    • Use a round cutter to cut biscuits and place them on the baking sheet.
    • Bake for 12–15 minutes, or until golden brown.
  • Make the Sausage Gravy:
    • In a large skillet over medium heat, cook the sausage, breaking it apart with a spatula, until browned and fully cooked. Do not drain the grease.
    • Sprinkle flour over the sausage and stir to combine. Cook for 1–2 minutes to eliminate the raw flour taste.
    • Gradually whisk in the milk, stirring constantly, until the gravy thickens (5–7 minutes).
    • Season with salt and black pepper to taste.
  • Assemble and Serve:
    • Split the warm biscuits in half and generously pour the hot sausage gravy over the top.
    • Serve immediately and enjoy!

Notes

  • Cold butter is key for flaky biscuits, so keep it chilled until ready to use.
  • For thinner gravy, add a little more milk until you reach your desired consistency.
  • Leftovers can be stored in the refrigerator for up to 3 days.
