- ¼ cup all-purpose flour
- 3 cups whole milk

- ½ teaspoon black pepper (or to taste)
Instructions
- Make the Biscuits:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- Cut in the cold, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Gradually pour in buttermilk, stirring just until the dough comes together.
- Turn the dough onto a floured surface and gently pat it into a 1-inch-thick rectangle. Fold it over itself a few times, then roll it out again.
- Use a round cutter to cut biscuits and place them on the baking sheet.
- Bake for 12–15 minutes, or until golden brown.
- Make the Sausage Gravy:
- In a large skillet over medium heat, cook the sausage, breaking it apart with a spatula, until browned and fully cooked. Do not drain the grease.
- Sprinkle flour over the sausage and stir to combine. Cook for 1–2 minutes to eliminate the raw flour taste.
- Gradually whisk in the milk, stirring constantly, until the gravy thickens (5–7 minutes).
- Season with salt and black pepper to taste.
- Assemble and Serve:
- Split the warm biscuits in half and generously pour the hot sausage gravy over the top.
- Serve immediately and enjoy!

- Cold butter is key for flaky biscuits, so keep it chilled until ready to use.
- For thinner gravy, add a little more milk until you reach your desired consistency.
